This is wonderful, and unique in Argentina as far as we are aware, and not just a gimmick wine, it’s serious stuff. There’s just the faintest hint of an onion skin hue in the glass, the only subtle giveaway that this white wine is made from red grapes. There are white flowers and a touch of wild strawberries on the nose; the palate is at once rich yet laced through with lovely, sensitive acidity. After a gentle press the must is clarified in stainless steel then put into concrete ‘pots’ for fermentation; the malolactic is partially interrupted and 10% of the wine is aged in French oak for approximately 4 months. A thing of genuine beauty and intrigue.
