In an interesting twist to the more typical Chardonnay Pinot Noir combination, a smidgen of Malbec grapes is used in this impressive traditional method sparkling wine, to add a little extra depth and oomph to proceedings. That said, the wine remains light and delicate in the mouth, with the kind of texture and fine mousse that can only be achieved through great attention to detail. This is a very small production, genuinely hand-made wine with not a hint of mechanisation in sight (Jean-Edouard brought some old wooden pupitres over from Champagne as the scale of the operation necessitates riddling and remuage by hand.) This wine is aged in bottle on its lees for 12 months prior to disgorging and is then rested for a further 2 months before release. Lovely summer fruit character throughout, nice biscuity notes on the nose, and a deliciously fine finish.
