The blend for this lovely dry white changes each vintage depending on what we and Boris feel works best. He sends over some options and we get busy in the tasting room, looking at blends he’s suggested and doing a bit of blending ourselves. Instinct is everything and we rarely if ever disagree with Boris. We are looking for 100% quality rather than stylistic consistency, and with the 2022 we have opted for a blend that is dominated by Sauvignon Blanc and pepped up with a judicious dollop of Vermentino.

As ever it’s from vines overlooking the Med on calcareous soils ; fermentation in stainless steel with no oak ageing, crisp and fruity in style with nice mineral notes and a cracking finish.
