A lot of Picpoul is quite neutral in style, offering very little on the nose other than a two dimensional citrus / mineral combo, if you’re lucky!
We were instantly drawn to this fabulous wine as it offers so much more. Not only are there lovely, delicate floral aromas on show, the mouthfeel is a far more satisfying experience than one might expect, being broad and soft prior to an impressive, lean and long finish reminiscent of apricot and Granny Smith apple.
Winemaker Boris Kovač explains the difference is achieved through extended lees ageing for 6 months prior to bottling. The wine is from the eponymous little town that overlooks the Thau basin and the Mediterranean sea, an area famous for its fabulous seafood and oysters in particular, thus the label illustration. Yes, those are oysters, not ears!
